I recently added the Golden Bird 7" Boning/Fillet Knife to my kitchen, and it's been a great knife to have. Not only does it look stunning, but it also performs very well.The wood handle and laser-etched blade give it a classy, high-end feel, it's the kind of knife you'd be happy to show off or even gift to someone who loves cooking. Right out of the box, it was very sharp, making it a breeze to start using as soon as you get it.What I love: + Gorgeous Design: The wood handle and detailed blade make this knife a standout piece in my kitchen. It's both functional and beautiful - a rare combo. + Incredibly Sharp: The high-carbon stainless steel blade came perfectly sharp and has stayed that way with regular care. It glides through meat and fish effortlessly. + Comfortable to Use: The handle fits perfectly in my hand, and the smooth finish makes it comfortable to hold, even during longer prep sessions. + Versatile: While it's designed for filleting and boning, I've found it handy for trimming fat, slicing smaller cuts of meat, and even chopping herbs.A few drawbacks: - No Sheath: My biggest gripe is the lack of a protective sheath. Storing a knife this sharp without one feels risky, and the gift box it comes in isn't a practical solution for everyday use. - Handle Durability (Potential Concern): The wood handle feels solid, but I'm curious how it will hold up over time. Nachdem ich mittlerweile 3 Dieser Messer gekauft habe-schickte man mir noch ein Gratismesser.Alles in allem rundum zufrieden.Solche Messer und auch Herr Lukas Hut ab.Vielen Dank

I’ve always wanted a knife with Damascus steel/the look of Damascus steel. Not only is this a beautiful filleting knife which my husband LOVES, but it also performs well. It was also packaged very safely, with cushions on either side of the blade and a point cap to avoid cuts when opening. As others have said, be wary that this does not come with a sheath. This is my only qualm with this product. Thankfully for me this filleting knife fits perfectly in my knife block, but I understand not everyone will have this luxury.

After a recent Costco-chicken-carving-fiasco, I ordered this knife. I needed something sharp because the set I has dulled over time and doesn't sharpen well. (I have a painted/colored set from Costco, so sharpening also makes them look bad - alas.) The first thing you notice is the mottling of the Damascus Steel. Its absolutely gorgeous. I didn't realize that a basic kitchen implement could be so beautiful. Its the sort of thing you feel proud to show off when guests are around. Its also sharp out of the box. I was able to thoroughly dismember the next Costco chicken we purchased and have used it regularly since. Its staying sharp and is holding up to regular washing. I'll reiterate another reviewer's point that the wooden handle makes me nervous - kitchen implements have a habit of ending up in the sink in my house, and I'm worried it will end up getting water-logged an warping. Shoppers should just be aware of that risk when ordering this knife. I'll also reiterate the concern that it doesn't come with a sheath. Right now, I'm keeping it in the box when not in use. Its probably safer that way anyway (no one will use it and stick it in the sink), but its somewhat invconvenient.
